Behind my business Ester Spirits

Hi, my name's Felix Clark. I'm the co-owner and founder of Ester Spirits. We're based in Marrickville in the inner-west of Sydney.

We're a craft distillery. We make a range of different spirits, cocktails, and liqueurs, probably most famous for our range of gin-centric products that we started with five years ago. My wife Corinna takes care of all the brand or outside of the bottle, and I take care of everything inside.

Four weeks after we launched, one of our products, our Strong Gin took out best gin in Australia in the 2020 Australian Gin Awards. Then shortly after that, we took out best Navy Strength gin in the world. Both of our rums last year in the 2024 World Rum Awards took out best in the world in their categories. So every product has to be exceptional. 

At Ester we believe in full throttle flavour so anything we do whether its our food or our beverage we’re all about more flavour. So when we’re making a gin generally our botanical load which is the botanicals we put in to make the gin they tend to be at a much higher ratio than a lot of other producers. It’s a little bit more expensive but the end result is a really saturated flavour that we get out of that.

Distilling is one of the oldest industrial processes known to man. What we're trying to do is extract or concentrate an alcoholic liquid out of lower alcoholic content. The most energy-intensive part of the distilling process is actually heating that liquid before we do the extraction and take the ethanol out.

I think when you talk about energy providers, a lot of times it's a set and forget. I've used AGL at several of my other businesses in the past, and it was just a no-brainer to bring them across here and use them. I am spinning hundreds of plates every day. So for me, knowing that the power's gonna be on and knowing that I don't need to worry about our supply or how we interact with our provider is very important to me.

Creating will never leave my spirit and Corinna is the same we love that creation side of things. When you take a product and it becomes business as usual that’s I guess you sort of compartmentalise that into the workspace. But then when you get to start re-iterating and innovating in the space that’s what really excites us.

Ester has a very strong future. We're looking at increasing our exposure of plant and equipment, potentially other sites for production, and really increasing that economy of scale to enable us to move more into other products and other categories, but also really giving Ester a great one-way to the market, both here and internationally.
